Everything starts on the small alpine pastures of South Tyrol, Italy’s most northern region on the Austrian border. Latteria Merano farms are located at an average altitude of 4.450 feet above sea level, where their cattle breath fresh mountain air and graze on fresh grass, flowers and alpine herbs. Every farm has an average of just seven cattle, who roam freely while the farmers look after them in the best possible manner. Also, the feeding is key to the quality; while during the warmer months the animals are free to graze on the herbs and flowers of the fields, in the colder periods they are fed with fodder that is purely natural, local and of course without GMO or antibiotics.
